Product Review – Fornetto Razzo 18″ Smoker

I recently road-tested the relatively new to the Australian market Fornetto Razzo 18” Multifunction Smoker, courtesy of ABA Supporting Partners and stockists BBQXL.

Made using a combination of enameled steel, stainless baskets and grills and safe touch silicone coated handles, the Fornetto Razzo is definitely a quality bullet shaped smoker.

The 18” size chamber easily fit my cook up of a 6kg brisket, a 2kg lamb shoulder and 3 racks of pork ribs at the same time and the interchangeable stackers helped manage the cook very easily.

Some great features of this unit are the stainless steel cooking baskets which can be double-stacked for greater capacity as well as the sealed doors and silicone door-knobs which allowed me to open and close the doors without gloves during the cook.pic4

The smoker is very solid in overall construction, the extra strong tripod legs ensure stability and the stacker handles are appropriately spaced away from the heat of the chamber to limit the risk of touching hot handles whilst swapping chambers during the cook up.

Given the thickness of the enameled steel used in the chamber construction, the retention of heat is very good. I tried a number of combinations of briquettes and lump charcoal and settled on a combination of a mix of both types of fuel to ensure a good stable and lasting heat source for low n slow cooking.

I personally prefer only to use the water pan (included with this unit) to bring the inside temperature of the chamber down to my desired cooking temperature and also to slow a cook down if it’s going a little too quick.pic3

Using a digital probe I check-tested the temperature gauge and it’s as accurate as I’ve seen any gauge and reads true to within 10F or better, approximately.

The unit can also be used as a grill, to cold smoke and also includes multiple hooks for you to hang your meats from a hanging frame positioned just under the lid.

The door seals help retain smoke from your smoking chips, dust or chunks and the chamber clips pull the stacker-chambers together quite tightly to retain a good amount of smoke but just as importantly the heat.pic2

As a general tip if you’re considering purchasing this style of unit, I did find that I needed to be more precise with the amount of fuel and smoking chips I used in the cook ups as the Fornetto retained heat and smoke quiet well and therefore needed less of both.
